Prepare the Lamon beans by leaving them to soak for 12 hours and, if possible, changing the water about every 3 hours. Drain them and cook them in salted water for 1 hour after boiling. Once drained, use them to prepare your favourite recipes!

Pasta and beans
Ingredients for 3 people:
125 g beans, 1 celery stalk, 1 carrot, 100 g short pasta, 1 sprig of rosemary, 1 shallot, 3-4 tbsp tomato pulp, EVO oil, salt, pepper.
Preparation:
Cook and drain the beans. Cut the celery and carrot into small pieces. Chop the shallot and brown it on a low heat in a saucepan. Add and sauté celery, carrot, tomato pulp and rosemary. Add the beans, cover with lukewarm water, pour in the pasta and cook. Serve hot with a drizzle of oil.
